Serves: 5-6
Prep time: 5 minutes
Cooking time: 25 minutes
Ingredients:
- 2 Potatoes
- 1 Leek
- 130g Broccoli approx.
- 1 Courget
- 1 Chicken breast
- 1l of vegetable stock
- 1 tspn chilli flakes
- 1 tblspn Paprika
- Salt & Pepper
1. Roughly chop your veg and make sure to cut your potatoes into small cubes so they cook quickly.
2.Cut your chicken into small pieces and add to a pot over a medium to high heat with a b
it of oil.
3. Add your stock along with the rest of the veg, salt and pepper and return to the boil. Turn down to a simmer.
4. Taste and season to your liking.
5. Add your paprika and chilli flakes and mix well.
6. Cook for 25 minutes and then blend.

I’m a qualified electrician but now a trainee chef doing the Total Immersion Chef Programme in the I.T in Cork. It’s a pretty intensive course for 12 months but worth all the work as you learn a huge amount from it.
