Bruschetta with mozzarella

Prep Time: 10 minutes

Rest Time: at least 10 minutes

Serves: 3-4

Ingredients:

  • 1 Bread loaf with a nice crust on it
  • 450g cherry tomatoes
  • 4 Garlic cloves
  •  Basil (fresh)
  •  Salt
  • 5 tablespoons of good Olive oil
  • Mozzarella (get the Irish made Buffalo mozzarella from the olive stall in the English Market)

 

1. Dice your tomatoes and put them into a bowl along with finely diced garlic and a generous handful of basil, which can be roughly chopped using a sharp knife or just by tearing with your hands.

2. Now add the olive oil and mix together. Let sit for at least 10 minutes. I think the longer it sits the better the flavours combine.

3. Slice the bread and put it under the grill to toast. Keep an eye on them as they will burn easily. When they’re ready remove from the grill and spoon some of the bruschetta on the slices of bread and place on a plate.

4. Dice up some mozzarella, place on top of the bruschetta and serve.
