Pan Fried Chicken with Lemon Balm and a Hot & Spicy Sauce

Time: 20 minutes

Ingredients:

  •  1 Chicken breast
  •  2 Large slices of aubergine
  •   1/2 Courget
  •   1/2 Tomato
  •   2 Leaves of lemon balm
  •   3 Tblspns of sweet chilli sauce
  •   1 Tspn honey
  •   1/2 Tspn sriracha sauce(hot sauce)
  •   1/2 Lemon
  •   Salt & Pepper
  •   Oil (rapeseed if possible)

 

1. Cut the chicken breast in half length ways down the side and season.

2. Slice your aubergine and cube your courget and season.

3. To make the sauce add the sweet chilli, sriracha sauce, honey and the lemon together and mix well. Taste to ensure its balanced properly.

4. Put a pan on a high heat and once hot add the chicken followed by the courget and aubergine 2-3 minutes later. Cook the chicken for 3-4 minutes on each side and during that time the chicken should crisp on the outside nicely. Once everything is cooked place on a plate.

5. Chop your lemon balm and tomato and add to the plate.

6. With a teaspoon pour a generous dose of the sauce over.
